I love shrimp scampi. But sometimes you may not have any fresh herbs or garlic! This easy shrimp recipe uses usual scampi ingredients such as lemon, butter, and white wine, but utilizes items from the pantry for the garlic and herbs. Of course, nothing beats fresh herbs, this easy shrimp recipe is still very delicious with the dried herbs.

  • 5 T butter
  • Zest of a lemon
  • 2 teas garlic powder
  • ½ teas dried oregano
  • ½ teas dried basil
  • ½ teas dried thyme
  • ¼ teas crushed red pepper flakes*
  • ½ cup sherry or other dry white wine
  • 1 lb raw shrimp (peeled / deveined)
  • ½ teas sea salt
  • ½ teas coarse black pepper
  • ½ teas dried parsley
  • 2 T fresh lemon juice (juice of 2 small lemons)
  • Parmesan cheese (optional for topping)


  1. Over medium heat, in a large skillet, melt butter.

  2. Add garlic powder, zest, oregano, basil, thyme, crushed red peppers and cook for 2 minutes while stirring occasionally.

  3. Then add sherry and let it reduce for about 2 minutes.

  4. Reduce heat to medium low, add shrimp, salt, black pepper and cook for 5 minutes while occasionally stirring.

  5. Add parsley and cook for 1-2 more minutes (or until shrimp is fully cooked)**

  6. Add lemon juice and stir.

  7. Top with some parmesan cheese.

  8. Remove from heat and serve.

If you do not like heat at all, you can reduce or omit the crush red peppers.  If you love heat, you can always add more.

Depending on the size of the shrimp, cooking times can vary. Cook until pink all the way through.


We usually just eat a bowl of this easy shrimp recipe for dinner and pair it with a simple arugula salad and nice bottle of dry white wine like Sauvignon Blanc.
