Instant Pot Celery Zucchini Soup

I have been reading that celery is an amazing food with tons of health benefits such as lowering cholesterol, reducing blood pressure, detoxing, improves heart health, supports weight loss and so much more!  With all these benefits, I want to make a Celery Recipe. I really love my Instant Pot Cauliflower Zucchini Soup, so I based this Celery Recipe with the foundations of that one in mind.  This Celery Recipe turned out awesome – it is so delicious, and the bonus is that it is super healthy! It is creamy (without having to use any dairy), and very comforting, and flavorful! Be healthy and enjoy!

This is fantastic. It used up all the stuff in the fridge to create space and was so healthy and delicious, the whole family gobbled it up. Thanks for a great recipe. Also, thank you for putting realistic timeframes on your recipe (for example, writing that it will take 25 minutes to come to pressure). A lot of recipes do not specify this and it can be so misleading! Personally it takes me much longer than 10 minutes to cut my veggies but I am just slow lol

What a delightful inspiration for how to use up some celery and zucchini! And I love resilient recipes…
Since I expected my spouse to ask if there was protein, I added a little mung dal and some leftover cooked chickpeas. To distract family members who may not fully appreciate celery (pretty much all of us) I added to the garnishing scallions a little smoked salmon and chopped almonds.

I’m not sure I needed the additions; everyone loved it. Thank you!

    1. I am happy to hear that you enjoyed it and also put your own twist to it! Your additions sound delicious and would make for a nice variation! Thanks!

I love this recipe and even lost weight by having it for lunch with fruit and yoghurt for two whole weeks and just prepared another batch just now. Thank you and a Happy New Year…
