Roasted Lemon Garlic Parmesan Romanesco
This Romanesco Recipe is so delicious! Romanesco is such a beautiful vegetable and is a great low carb veggie option. Try this Romanesco Recipe as one of your low carb sides!
- 1 Head of Romanesco (cut into small florets)
- 2 T olive oil
- 1/2 teas black pepper
- 1 teas garlic powder
- 1/4 teas salt
- 1/4 teas crushed red pepper
- Juice of a lemon
- 1/4 cup grated Parmesan cheese
Preheat oven to 425.
In a small container, combine black pepper, crushed red pepper, garlic powder and salt.
In a mixing bowl, combine olive oil and Romanesco.
Then sprinkle the spice mixture over the Romanesco and combine.
Spray a baking sheet with cooking spray.
Spread out the Romanesco on the prepared baking sheet.
Roast for 20 minutes (tossing them around halfway through).
When the Romanesco has finished roasting, transfer back to the mixing bowl.
Add the juice of a lemon and parmesan and combine.
This Romanesco Recipe would pair nicely with any low carb / keto meat dish (such as chicken, pork, shrimp, or steak).
You can food prep for this recipe by cutting up the Romanesco in advance.
