I love a great Pasta Salad! Pasta Salad is the perfect dish to make for either a Summer side dish or a meal. Jimmy loves this pasta salad too! This Pasta Salad recipe is flavorful and refreshing with the delicious tastes of fresh herbs, lemon, and feta, with lots of spinach! You can make this Pasta Salad on a food prep day and enjoy it all week! It would also be a big hit at a party or picnic! I know you will love this Pasta Salad as much as we do!

Spinach and Feta Pasta Salad

Ingredients

Salad Ingredients:

  • 14.5 oz box of healthy Farfalle (Bowtie) pasta*
  • 5 oz fresh baby spinach chopped
  • 1/2 cup roasted red peppers chopped
  • 1/4 cup spicy jarred peppers chopped**
  • 1/3 cup finely chopped white onion
  • 1 cucumber peeled seeded chopped
  • 1 tomato seeded and chopped
  • 8 oz feta diced***

Dressing Ingredients:

  • 1 T fresh parsley chopped
  • 1 T fresh oregano chopped
  • Juice of a lemon
  • 3 T red wine vinegar
  • 1 teas whole grain Dijon mustard
  • 1/3 cup extra virgin olive oil
  • ½ teas thyme
  • ½ teas salt
  • ½ teas black pepper
  • 1 teas honey

Instructions

  1. Place all salad ingredients together in a large mixing bowl and mix to combine.

  2. Place all dressing ingredients in a small mixing bowl, and whisk until blended.

  3. Pour the dressing over the salad and mix until combined.

  4. Let chill for at least an hour before serving.

Recipe Notes:

*For the Pasta, I used Barilla Protein Plus (100% plant-based protein) . Bowtie is a fun shape to use in Pasta Salads, but you can use a different type shape of pasta like rotini or fusilli if you can’t find it or want to use something that you already have in your pantry.

**For the spicy jarred peppers, I used Patty’s Peppers: Mom’s Original Recipe Zesty Garlic.
You could also use cherry peppers or banana peppers. If you do not like spicy, you could instead use pepperoncini peppers, pimentos, or more roasted red peppers. You could also try different combinations of peppers!

***For the feta, I use feta cheese packed in brine – I think it tastes fresher when you get this type rather than the kind that is already crumbled, but that kind works too.

Food Prep:

You can make this Pasta Salad on a food prep day and enjoy it all week! The flavor just gets better as it marinates. It is also a perfect make-ahead dish for a party or picnic!
