I love dishes with tomato and fresh basil. I also love making shrimp recipes. Whynot do a tomato basil shrimp recipe!
Over medium heat, in a large skillet, melt butter and olive oil.
Add garlic, tomatoes and cook for 1-2 minutes (stirring occasionally – be sure not to burn the garlic).
Then add sherry and let it reduce for about 1-2 minutes.
Reduce heat to medium low, add shrimp, salt, black pepper, cherry peppers, and cook for 5 minutes while occasionally stirring (or until shrimp is fully cooked)*
Add lemon juice, basil and stir.
Remove from heat and serve.
When serving, top with some parmesan cheese and some more basil.
