Spinach and Feta Pasta Salad

Ingredients

Salad Ingredients:

  • 14.5 oz box of healthy Farfalle (Bowtie) pasta*
  • 5 oz fresh baby spinach chopped
  • 1/2 cup roasted red peppers chopped
  • 1/4 cup spicy jarred peppers chopped**
  • 1/3 cup finely chopped white onion
  • 1 cucumber peeled seeded chopped
  • 1 tomato seeded and chopped
  • 8 oz feta diced***

Dressing Ingredients:

  • 1 T fresh parsley chopped
  • 1 T fresh oregano chopped
  • Juice of a lemon
  • 3 T red wine vinegar
  • 1 teas whole grain Dijon mustard
  • 1/3 cup extra virgin olive oil
  • ½ teas thyme
  • ½ teas salt
  • ½ teas black pepper
  • 1 teas honey

Instructions

  1. Place all salad ingredients together in a large mixing bowl and mix to combine.

  2. Place all dressing ingredients in a small mixing bowl, and whisk until blended.

  3. Pour the dressing over the salad and mix until combined.

  4. Let chill for at least an hour before serving.
