Italian Street Corn Salad

Ingredients

  • 4 ears of corn
  • 1 peach diced
  • 1 tomato diced
  • Handful of basil chopped
  • 8 oz burrata cheese chopped
  • 1 T Calabrian Chili (jarred)*
  • ½ teas coarse black pepper
  • ½ teas sea salt
  • 2 T olive oil
  • Juice of a lemon

Instructions

  1. Boil the corn for 3 minutes and let cool so it is not too hot to handle.

  2. When the corn is cool enough to handle, cut off the kernels.

  3. Add kernels and all other ingredients to a mixing bowl and combine.
