Truffle Burrata Shrimp Salad

This Truffle Burrata Shrimp Salad is amazing! This combines some of my favorite ingredients and flavors together in one dish – truffle, burrata, shrimp, Calabrian chili and basil.

Ingredients

  • 1 lb shrimp (raw, frozen, peeled and deveined)
  • Juice of a lemon
  • Pinch of salt
  • 1 1 tomato diced and seeded
  • 8 oz jar of roasted red peppers chopped
  • Handful of basil chopped
  • 8 oz truffle burrata cheese chopped
  • 1 T Calabrian Chili (jarred)*
  • ½ teas coarse black pepper
  • ½ teas sea salt
  • 2 T olive oil
  • Juice of a lemon

Instructions

  1. In a pot, bring water to a boil, add juice of a lemon and pinch of salt.

  2. Boil the shrimp for 5 minutes.

  3. Drain shrimp in colander and run cold water on it until cool enough to handle.

  4. When the shrimp is cool enough to handle, cut into halves or thirds.

  5. Add shrimp and all other ingredients to a mixing bowl and combine.
