Ingredients

  • 4 T butter
  • 1 onion chopped
  • 8 garlic cloves chopped
  • ¼ cup sherry
  • 1 lb raw shrimp (peeled / deveined)
  • 1 T fresh rosemary chopped
  • ½ cup tomato sauce
  • ½ cup roasted red peppers chopped
  • 2-3 cups baby spinach roughly chopped
  • 1 cup heavy cream
  • ½ cup parmesan cheese
  • Fresh Basil and additional parmesan cheese (optional for topping)

Instructions

  1. Over medium heat, in a large skillet, melt butter and fry onions for about 5 minutes.

  2. Add garlic and cook for a minute more.

  3. Then add sherry and let it reduce for about 2 minutes.

  4. Add shrimp, roasted red peppers and rosemary, and cook for 5 minutes while occasionally stirring.

  5. Add, tomato sauce and spinach, and stir for about 1-2 minutes until the spinach starts to wilt.

  6. Turn down to medium low, add cream and parmesan cheese and cook for 5-10 minutes stirring occasionally (until shrimp is cooked and cream has thickened to your likeness).

  7. When serving, top with some parmesan cheese and basil.

Recipe Notes

For the tomato sauce, I used Rao’s Arrabbiata.
Rao’s sauce is my favorite sauce to use in any recipe!
