Ingredients

  • 4 T butter
  • 1 T olive oil
  • 8-10 garlic cloves chopped
  • ½ cup sherry or other dry white wine
  • 1 lb raw shrimp (peeled / deveined)
  • ½ teas sea salt
  • ½ teas coarse black pepper
  • 1 T cherry peppers (jarred) chopped
  • 1 cup grape tomatoes
  • Juice of lemon
  • Handful of Fresh Basil coarsely chopped
  • Parmesan cheese (optional for topping)

Instructions

  1. Over medium heat, in a large skillet, melt butter and olive oil.

  2. Add garlic, tomatoes and cook for 1-2 minutes (stirring occasionally – be sure not to burn the garlic).

  3. Then add sherry and let it reduce for about 1-2 minutes.

  4. Reduce heat to medium low, add shrimp, salt, black pepper, cherry peppers, and cook for 5 minutes while occasionally stirring (or until shrimp is fully cooked)*

  5. Add lemon juice, basil and stir.

  6. Remove from heat and serve.

  7. When serving, top with some parmesan cheese and some more basil.

Spicy Tomato Basil Shrimp Recipe Notes:

If you do not like heat at all, you can reduce or omit the cherry peppers.  If you love heat, you can always add more!

Depending on the size of the shrimp, cooking times can vary. Cook until pink all the way through.

Pairings:

We usually just eat a bowl of this Tomato Basil shrimp recipe for dinner and pair it with a simple arugula salad and nice bottle of dry white wine like Sauvignon Blanc. If you are not watching your carbs, you will love dipping some Italian bread in the sauce or serving over pasta.

This recipe is quick and easy to make for a healthy weeknight meal since the amount of food prep is minimal.
