I love shrimp scampi. This shrimp scampi recipe has the usual scampi ingredients such as garlic, lemon, and white wine. This is even more flavorful with all the fresh herbs. The rosemary especially makes this recipe stand out.  This shrimp scampi recipe is very easy and quick to make.  I hope you enjoy this as much as we do!

Herbed Shrimp Scampi

This shrimp scampi recipe has the usual scampi ingredients such as garlic, lemon, and white wine. This is even more flavorful with all the fresh herbs. The rosemary especially makes this recipe stand out.

Ingredients

  • 1 T butter
  • 10 garlic cloves chopped
  • Zest of a lemon
  • 1 T fresh rosemary chopped
  • 1 T fresh thyme chopped
  • ¼ teas crushed red pepper flakes*
  • ½ cup sherry
  • 1 lb raw shrimp (peeled / deveined)
  • ½ teas sea salt
  • ½ teas coarse black pepper
  • ¼ cup fresh parsley chopped
  • 2 T fresh lemon juice
  • Fresh Basil and parmesan cheese (optional for topping)

Instructions

  1. Over medium heat, in a large skillet, melt butter.

  2. Add garlic, zest, rosemary, thyme, crushed red peppers and cook for 2-3 minutes (stirring occasionally – be sure not to burn the garlic).

  3. Then add sherry and let it reduce for about 2 minutes.

  4. Reduce heat to medium low, add shrimp, salt, black pepper and cook for 5 minutes while occasionally stirring.

  5. Add parsley and cook for 1-2 more minutes (or until shrimp is fully cooked)*

  6. Add lemon juice and stir.

  7. Remove from heat and serve.

  8. When serving, top with some parmesan cheese and basil.

Herb Shrimp Scampi Recipe Notes:

*If you do not like heat at all, you can reduce or omit the crushed red peppers.  If you love heat, you can always add more.
*Depending on the size of the shrimp, cooking times can vary. Cook until pink all the way through.

Pairings:

We usually just eat a bowl of this shrimp scampi recipe for dinner and pair it with a Simple Arugula Salad or steamed broccoli, and and nice bottle of dry white wine like Sauvignon Blanc. This would also pair well with my Roasted Lemon Garlic Parmesan Romanesco recipe. If you are not watching your carbs, you will love dipping some Italian bread in the sauce or serving over pasta.
