Ingredients

  • 1 cup blackberries
  • ½ cup red wine
  • 2 garlic cloves finely minced
  • ½ teas dried thyme
  • 1 T brown sugar
  • ¼ teas sea salt
  • ¼ teas coarse black pepper

Instructions

  1. Muddle the blackberries in a small / medium saucepan.

  2. Add remaining ingredients and cook over medium high heat for 10 minutes (in the beginning, whisk occasionally and about½ way through, stir frequently).

  3. Let rest at least 10 minutes before serving to allow it to thicken up.

Ingredient Notes: *

For the red wine, I use a Pinot Noir or a Rhone, but any wine that you enjoy drinking will do. When you use red wine for cooking, you wouldn’t want to cook this with something you wouldn’t want to drink.

For the garlic, I just put it through a garlic press, but chopping works fine too.

If you want to lower the carbs, for the brown sugar, I use Swerve.

Pairings:

This pairs wonderfully with filet mignon, pork, turkey, chicken and fried or grilled halloumi cheese.

Food Prep:

This comes together quickly, so the food prep is minimal.  Since this sauce needs to rest for 10 minutes, I would suggest making this before cooking your main, that way it can rest while the main dish is cooking.
