Creamy Tuscan Shrimp
This Low Carb Shrimp recipe is so delicious, fancy, and easy to make. The flavors of the fresh herbs really standout. I hope you enjoy this as much as we do!
Ingredients
- 4 T butter
- 1 onion chopped
- 8 garlic cloves chopped
- ¼ cup sherry
- 1 lb raw shrimp (peeled / deveined)
- 1 T fresh rosemary chopped
- ½ cup tomato sauce
- ½ cup roasted red peppers chopped
- 2-3 cups baby spinach roughly chopped
- 1 cup heavy cream
- ½ cup parmesan cheese
- Fresh Basil and additional parmesan cheese (optional for topping)
Instructions

Over medium heat, in a large skillet, melt butter and fry onions for about 5 minutes.

Add garlic and cook for a minute more.

Then add sherry and let it reduce for about 2 minutes.

Add shrimp, roasted red peppers and rosemary, and cook for 5 minutes while occasionally stirring.

Add, tomato sauce and spinach, and stir for about 1-2 minutes until the spinach starts to wilt.

Turn down to medium low, add cream and parmesan cheese and cook for 5-10 minutes stirring occasionally (until shrimp is cooked and cream has thickened to your likeness).

When serving, top with some parmesan cheese and basil.

Pairings:
We usually just eat a bowl of this Low Carb Shrimp recipe for dinner and pair it with a nice bottle of dry white wine like Sauvignon Blanc. If you are not watching your carbs, you will love dipping some Italian bread in the sauce. This would also be great over pasta too. If you want extra veggies, you can also pair it with a Simple Arugula Salad or steamed broccoli or you can add extra spinach to the sauce. This would also pair well with my Roasted Lemon Garlic Parmesan Romanesco recipe.
