Corn salad is a perfect summer dish! Mexican street corn salad has become a popular dish. This corn salad is my Italian spin on it with incorporating Italian ingredients such as burrata cheese, Calabrian chili and basil. Italian Street Corn! Perfectly sweet, spicy, and fresh!
Corn salads in the summer remind me of my sister Becky (she loves corn salads and all of these ingredients)! I am dedicating this recipe to her; perfect timing since it is her birthday month – Happy Birthday Becky!
Italian Street Corn Salad
This Italian Street Corn salad is a perfect summer dish – Perfectly sweet, spicy, and fresh!
Ingredients
- 4 ears of corn
- 1 peach diced
- 1 tomato diced
- Handful of basil chopped
- 8 oz burrata cheese chopped
- 1 T Calabrian Chili (jarred)*
- ½ teas coarse black pepper
- ½ teas sea salt
- 2 T olive oil
- Juice of a lemon
Instructions

Boil the corn for 3 minutes and let cool so it is not too hot to handle.

When the corn is cool enough to handle, cut off the kernels.

Add kernels and all other ingredients to a mixing bowl and combine.

For the Calabrian Chili, I used Trader Joe’s Italian Bomba Hot Pepper Sauce Fermented Crushed Calabrian Chili Peppers.
