This long hot pepper recipe is a delicious and spicy low carb appetizer. Long hot peppers are very long and spicy!  This long hot pepper recipe only requires 4 ingredients and is perfect to serve to your friends who like spicy food and are trying to keep it low carb.  Do not skip the fresh lemon juice for the finish – it really brings all the flavors together!

Ingredients

  • 4-8 Long Hot Peppers*
  • 1 cup sharp provolone cheese shredded*
  • Prosciutto*
  • Freshly squeezed lemon juice

Instructions

  1. Pre-heat oven to 400

  2. Line a baking sheet with tin foil and spray with cooking spray

  3. Cut tops and bottoms off the peppers**

  4. Cut each pepper down the middle and remove seeds**

  5. Cut the peppers into halves or thirds depending on how long they are (should be 2-inch pieces)

  6. Place peppers on the prepared baking sheet

  7. Put a piece of prosciutto in each pepper piece (use long and narrow pieces of prosciutto so the ends hang outside of the pepper)

  8. Then stuff each pepper piece with cheese

  9. Flip the ends of the prosciutto that were hanging outside of the pepper over the cheese to secure.

  10. Roast the stuffed peppers for about 20 minutes

  11. Remove the baking sheet from the oven

  12. Squeeze the juice of the lemon over the peppers

  13. Serve / enjoy!

Ingredient Notes: *

Long Hot Peppers: These peppers are HOT!  If you do not like spicy food, then these peppers are not for you. Long hot peppers are very long, and they vary in size.  Depending on the size and how many you pick up, the quantities of the ingredients you need may vary. 

You could substitute these for with mild peppers – like the mini bell peppers.  If you use mini bell peppers, you only need to cut open down the middle.

If you want to keep it vegetarian, you can omit the prosciutto.

Notes for Instructions: **

Since these peppers are so HOT, be careful while handling – wear gloves if you have them or wash your hands after handling them. The stems and seeds of the peppers make the spice level higher. I usually can’t handle that level of heat, so I remove and prepare as above. If you like the heat, you can always keep them in.

Pairings:

This Long Hot Pepper Recipe is great to serve at parties or gatherings. It goes great with Italian or BBQ food.  It also pairs nicely with some dry white wine like Sauvignon Blanc.

Food Prep:

To save some time, you can assemble the peppers ahead of time and refrigerate.  Then pop them in the oven and roast when you are ready to serve.
